These are the menus for student meals in elementary schools with operating on-site kitchens.  These menus are also used for Early Education Centers that receive meals from on-site cafeterias.  The menus do not apply to elementary schools receiving Newman Nutrition Center satellite meals or bag meals.

NATIONAL SCHOOL LUNCH PROGRAM

The Traditional Food Based Menu Planning System is used for LAUSD Elementary Schools.  The regulations under this system require that five components be offered for lunch.

1.             Meat/Meat Alternate (M/MA)                                          2 oz. serving equivalents (K-3=1½ oz.)

                Cooked Lean Meat, Fish or Poultry                                  2 oz.

                    or Eggs                                                                              1 egg

                    or Cooked Dry Beans or Dry Peas                                ½ cup (#8 disher)

                    or Peanut Butter or Nut Butter                                       4 tablespoons (#16 disher)

                    or Nuts and/or Seeds*                                                    1 oz.

                    or Yogurt, flavored                                                          8 oz.

*(Nuts may count as no more than 1 oz. Meat/Meat Alternate equivalent.  They must be served with 1 oz. additional Meat/Meat Alternate equivalent to meet the full requirement.  For example:

1 oz. peanuts plus 2 oz. [#16 disher] cottage cheese will meet the 2 oz. equivalent).

2.             Grain/Bread (G/B)                                                              8 servings/week for grades K-6

                                                                                                                Minimum of one serving per day

Includes whole grain or enriched grain, bread, pasta and rice.  District Requirement:  All sandwiches must be made with wheat bread.  Hot dog buns, hamburger buns, and most dinner rolls must be wheat.

3, 4.         Fruit/Vegetable (F/V)                                                         2 servings/day to equal a total of Ύ cup

At least two (2) different items must be offered to meet the Fruit/Vegetable requirement, the total equaling at least Ύ cup/day.

5.             Milk (M)                                                                                ½ pint (including K-3)

Offer 1% low-fat milk to students daily.  Fat-free milk, fat-free chocolate milk and/or buttermilk may also be offered.  Whole milk and 2% reduced-fat milk may not be offered to students.  The exceptions are:

                1.) Infant Centers where whole milk should be used for children 1-2 years of age,

                2.) Selected students at special education schools.
